(No-flour, no oven) Sweet pumpkin bread

I would like to dedicate this post to all of my fellow bread lovers on diet. Even when I am on diet I can enjoy one slice of bread with my coffee. It's perfect as a snack for children, as well. I've found this on few Korean cooking blogs and just love it! I have used only half the pumpkin because right now there is nobody else but me to eat it. It filled a bowl of a size of the Ramyun pot.

No butter. No flour. No baking powder. No yeast.

Cheap ingredients!

Prepare: tools: something to whip egg whites, microwave, bowls (one for use in the microwave), clear wrap ingredients: 2 eggs, 1/2 sweet pumpkin, 1/4 cup milk, oil for coating the bowl

1) Remove the peel of the pumpkin and chop it to dices. Put them into a bowl, add a little water and put it to microwave for about 6 minutes. 2) Meanwhile, whip 2 egg whites - must be whipped well. 3) Take out the pumpkin out of the microwave, get rid of the remaining water and mash it (I just mashed it with fork and it worked well) Mix in the 2 yolks (next time I will try just one, to lower the amount of fat in the bread, will update how it went ^^) 4) Add the whipped whites with a wooden spoon and mix it in SLOWLY so the foaminess of it survives. 5) Coat a bowl that will go to the microwave with oil (I used 1 tea spoon, only so it doesn't stick to the bowel) 6) Use clear wrap over the bowel and make sure to make holes into it. The bread won't come up tall so it won't touch the wrap if you used bowl big enough. 7) Put it in a microwave for 10-12 minutes. ~THE END ~

MACROS for 1 loaf: (used low fat milk, 1/2 pumpkin was about 300g) calories: 285, carbs: 31, fats: 10.5, protein: 17

TIP: For richer flavor add crushed WALNUTS!

MACROS for ! loaf w/walnuts (7 pcs, crushed): calories: 366, carbs: 35, fats: 29, protein: 21

TIP: Before peeling and dicing the pumpkin, put the whole thing into a microwave for 4~5 minutes. It will soften a bit.
